Instructions
- Soak the potatoes in water to remove excess starch. Cut the onion into thin slices and the carrot into random pieces. Cut the beef into bite-sized pieces.
- Heat the vegetable oil in a pot and stir-fry the beef until browned.
- Add the onion and cook until softened.
- Add the potatoes, carrot, water, dashi, soy sauce, mirin, and sugar. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- Dissolve the cornstarch in a small amount of water and add it to the pot, stirring constantly until the sauce thickens.
